Guadeloupe - Chef of the gastronomic kréol restaurant « Ô Z'Épices » in Bouillante

Since childhood, Jimmy BIBRAC loved to cook. This passion comes from his family. His father, a farmer, passed on the culture of quality local products.

Today, he makes it a major asset and shares it in his restaurant, where he mainly works with seasonal products and promotes through his dishes, spices and local plants, as ‘nutraceuticals’ for their virtues.

His motto is “the strength of taste comes from our origins”, because according to him, “the wealth of an intangible cultural heritage that we have is important to transmit, to develop for the pleasure of eating well”.
